Department of Chemistry and Chemical Engineering, Ovidius University, 124 Mamaia Blvd, 900527 Constanta, Romania ___________________________________________________________________________________________ Abstract Emulsions are heterogeneous systems consisting of at least one liquid dispersed in another immiscible liquid phase under variable sized drops. The aim of the present study is to determine some characteristics (aspect, odor, color, solubility, emulsion type, pH, water and volatile substances content, total fatty matter, acidity, iodine index) of three types of yogurts and three types of creams from the local market. The stability of emulsions has been studied at different temperatures: 4C, 30C and 60C. It has been noticed that for yogurt samples the temperature increasing determined the disperse of coagulant and the acidity increasing, while for creams the pH and fat content gradients are positive with temperature.

Physical and Rheological Properties of Oil in Water Heat Stable Emulsions Made from Different Stabilizers
Oil in water emulsions have attracted considerable attention in food industry due to their large applications. In this study, the effect of thermal treatment on oil in water emulsions (o/w) containing 40% oil was studied. The emulsions were prepared using xanthan gum, guar gum and carboxymethyl cellulose as stabilizer and polyoxyethylen sorbitan monooleat as emulsifier. A mixture design was use...
متن کاملEffect of Salinity, pH, and Temperature on Stability of Gas Condensate in Water Emulsions Using Different Surfactants
Light hydrocarbons in water emulsions are formed in many gas refinery wastewaters, and its stability depends on some parameters such as temperature, pH and salinity. In this study, different surfactants have been used to prepare gas condensates in water emulsion along with four surfactant kinds namely, Span 80, Tween 80, CTAB, SDS and Span 80 and Tween 80 mixture. For this purpose,...
متن کاملEffective Factors on the Stability of Oil-in-Water Emulsion Based Beverage: A Review
Beverage emulsions are systems that are composed of two liquids including oil and water which are prepared by homogenizing oil phase in an acidic aqueous phase. They must be stable in both concentrated and diluted form for a period of 6-12 months upon standing at room temperature. Two immiscible phases contained systems are thermodynamically unsta-ble. In other words, they are vulnerable to bre...
متن کاملThe physical and rheological properties of egg albumin emulsions are influenced by basil seed gum as the stabilizer
In this study, the effect of basil seed gum (BSG) on the stability and rheological properties of egg white albumin (EWA) emulsions was investigated. A constant amount of EWA (0.5% w/v) and different concentrations of BSG (0-0.3% w/v) were used for the manufacture and stabilization of oil-in-water emulsions (30% w/w). The results showed that by increasing BSG concentration, the storage (21 days)...
متن کاملInfluence of Time and Temperature on Stability of Added Vitamin D3 During Cooking Procedure of Fortified Vegetable Oils
Background and Objectives: Previous research has established that Vitamin D3 (Cholecalciferol) deficiency is considered to be a highly prevalent nutritional problem worldwide. Data from National Food and Nutrition Surveillance Program (2015) revealed that prevalence of vitamin D3 deficiency in Iran is more than 70% of the population. Vegetable oils are considered to be potential candidates for ...
